Preserve The Family Restaurant and Steak House - The Golden Steer



A brilliant banker, writer and culinary journeyman, Steve Jordan, lamented the manic idiocy that passes for Food Shows on cable television.  He noted that what had once been a comfortably informative sharing of recipes and food prep techniques is now a mere rat-race of reality TV tryting to beat the clock.

Cable has done more to kill history than Howard Zinn - witness the History Channel Lineup: Pawn Stars, American Pickers, Ice Road Truckers, Counting Cars.  Edward Gibbon's Decline and Fall is  the greatest holistic consideration of an epoch of history and the History Channel is a cartoon station with very rare exceptions. So too. have become  Cookin Channel Food Network treatments like Chopped, Rev Runs Sunday Dinners, Cupcake Wars, and Cutthroat Kitchen.

People who relish these television servings of shallow and empty I.Q. calories, also tend to flock to LongHorn Steakhouse, Chipotle, Applebees, Chilies, Olive Garden and other trick-name ( PTSD McNugget's Shamrock Pub Grubs) big-box swill troughs.  Family owned restaurants offer better food and often better parking, service and mosty certainly atmosphere.

Yesterday, I treated my lady friend to dinner at Forest Park's. Golden Steer*.

This is a family owned and operated steak house run by the same family since 1969,  "Owners/Chefs Kiriakos (Charlie) and Gus Tzouras bring more 35 years experience in creating meals that will warm up your stomachs and your souls."

Tell me about it.

We arrived at 4:30 P.M. and were greeted by two lovely women who have worked at this restaurant for more than two decades. The hostess informed me that she also works as a soda jerk in an old fashiones icecream parlor during the day.  Our waitress was a decades long veteran who said," We love coming to work here and if we get fired, we are hired back the same day - go figure."

Loyalty begets great service.

I ordered a T-Bone medium rare with baked potatoe, roasted asparagas and Roqueford salad and the exquiite Miss Sullivan ordered the broiled scrod, baked potatoe and house salad and shared the broiled asparagas.  After we placed our order the Owner/Chef Charlie asked if we would mind moving to another table, as a large family had come in with more guests than the reservations taken - it was big Mexican American family celebrating a young lady's graduation from Dominican University in River Forest.  We were only too happy to jump tables.

By 5 P.M. the restaurant was filled to capacity and the bar was thick with people waiting for a table.

The food was wonderful and our waitress was attentive and sweetly salty with me, " Want me get a wheel chair to roll out after tucking away the grub, Honey?" Truth be told, I took home 3/4the of the T-Bone and Miss Sullivan carried away half of her scrod.

Before I could call for the bill,  the owner and our lovely waitress put a thick slice of Tiramisu between us and order us to do it justice.  I did most of the heavy-lifting.  This was Chef Charlie's thank you to us for moving to another table.  Family means much to a family business.

Will family owned and operated restaurants be around for future generations?

I rather doubt it.  Look at what passes for television and look at the forest of Applebees, Longhorns, Chili's and DT McPtomaine's.

First Lady Michelle Obama's War on White Privilege


 

So we know that when we rely on sound science, we can actually begin to turn the tide on childhood obesity. .  .  Right now, the House of Representatives is considering a bill to override science by mandating that white potatoes be included on the list of foods that women can purchase using WIC dollars. Now, there is nothing wrong with potatoes. The problem is that many women and children already consume enough potatoes and not enough of the nutrient-dense fruits and vegetables they need. That’s why the Institute of Medicine — the nonpartisan, scientific body that advises on the standards for WIC — has said that potatoes should not be part of the WIC program.  Michelle Obama, First Lady ( empases my own) 
Here is the racist alternative of "white" privilege.
The "white" potato, know today as the Irish potato, originated
in the Andean Mountains. In 1532 the Spanish arrived in north Peru
and it is speculated that they brought the potato to Europe in the
second half of the 16th century.(8) Because they were classified in
the same botanical family as the poisonous nightshade, potatoes
were thought to be poisonous and people refrained from eating
them.(9) Potatoes were considered a novelty and became fashionable
in the mid-eighteenth century when Marie Antoinette wore potato
blossoms in her hair. During the eighteenth century, the monarchs
of Europe discovered the nutritional value of the potato and
ordered it planted.(10) By 1800, the potato had taken root and
ninety percent of the Irish population was dependent on the potato
as their primary means of caloric intake and as an export.(11)
Since the famine, the Irish have expanded their diets; however, the
potato continues to be a dietary staple in 130 countries today,
including Ireland.

     Potatoes contain nutrients, such as protein, carbohydrate, and
vitamin C, which are necessary for a healthy diet, but lack vitamin
A and calcium. Combined with milk, potatoes supply almost all food
elements required for a healthy diet.(13) To fulfill the daily
nutritive requirement in the mid-1800s, each person had to eat 3
kilograms (six and a half pounds) of potatoes. According to
historical accounts, a "burley farmer could down 15 potatoes" at
one meal.(14) 


OMG! White Privilege - white spuds - has made America's Kiddies Lard Asses? Why ?  White potatoes must be the racist Tea Party spoon foods.  The Irish, as we all know too well from film and the media, are intrinsically racist, until they abandon the Church of Rome for the United Church of Christ and Bill Moyers or become Unitarians.

Spuds are not only the cause of obesity but the food of white privilege.

I did not know that.  

Spuds kept millions of my people alive, until a blight wafted its way over the waves from the West Indies to west Kerry.  Tatters were in tatters from 1845-1847 and the subsisitence food that the scientists of  Perfidious Albion determined that Paddy and Bridget and the broods of bairns could keep making Galtee Cheese, butter and milk, raise hooved beef & swine and gather corn and wheat for export to Queen Victoria, Darwin, Karl Marx and  Fred Engels, as well as many Progressive minded men and women of sense and good nutrition -
“Here, then, under our own eyes and on a large scale, a process is revealed, than which
nothing more excellent could be wished for by orthodox economy for the support of its dogma:
that misery springs from absolute surplus-population, and that equilibrium is re-established by
depopulation. This is a far more important experiment than was the plague in the middle of
the 14th century so belauded of Malthusians… The Irish famine of 1846 killed more than
1,000,000 people, but it killed poor devils only. To the wealth of the country it did not the
slightest damage.” (Marx, 1867)
Big Government did what it could at the time for the spud eaters -
 “LVIII. And be it enacted, That every Person who shall refuse to be lodged and maintained in
the Workhouse of any Union, or abscond out of such Workhouse while his Wife, or any Child
whom he may be liable to maintain, shall be relieved therein, and every Person maintained in
a Workhouse who shall refuse to be set to work… contrary to the Orders of the
Commissioners, shall, on Conviction… be committed to the Common Gaol or House of
Correction, there to be kept to hard Labour for any Time.” (Poor Relief (Ireland) Act 1838,

The Potato Famine was a misnomer employed by men of sense and science to hide thievery and villainy of a Government that does not like people.  Studies were more valued, as they are in Obama's America, than common sense and that is why food left Ireland in great quantities, while Catholic spud eaters died up a storms or Effed Off to Yankland.

Potatoes could sustain life, but that food was denied -its white privilege erradicated.

So says, First Lady Michelle Obama.

Doreen's Frozen Gourmet Pizza - Herakleophorbia



I am a devout Catholic and an empiricist -in most things beyond metaphysics. I am not a devotee of Vito and Nick's, Fox's, Milano's, Roseangela's and Barraco's pizza because I am a south side parochialist, but because I ate pizza from Buddy's Pizza at 79th & Paulina as well as Caruso's on Ashland.

I was blessedly schooled in fine pizza, as a kid from Bordeaux, or Napa might say that he had sampled some Okay wine. I grew up in Pizza Utopia. Palermo's on 63rd! Falco's on Archer! Oh, Happy Land! Someone exclaims, " We're having pizza!!" and a south sider's mind races - "'Kay -don' panic. Be nice. Don' get your hopes up. It might be OK but expect Red Baron or Saltines with Brooks Ketchup on 'em. You're in Indiana for Crissakes. Calm down."

Later, while studying at Loyola University -north of Madison Avenue - I experienced Pizzeria Uno & Due and My Pi ( Greek Logo) - nice. Lou Malnati's ? If it's in front of me. Home Run Inn? Ditto.

I lived in Indiana from 1988-1998 - Pizza desert.

The south side of Chicago, Blue Island, Calumet Park, Calumet City and Chicago Heights were blessed by Italian immigrants who know how to toss pizza - thin to win and thick for the Micks. Mrs. Panatera made a gravy ( red tomato sauce) that if it were ladled over my son Conor's old New Balance mud dancers I'd devour that footwear.

I developed my gustatory tastes and sensibilities along with my passion for literature.

Last week, while shopping at County Fair Foods* for my three kids who eat like they're going to the Chair, I discovered Doreen's Gournet Frozen Pizza. Most frozen pizza's taste like the boxes that contain them; however, Doreen's Pizza ( jalapeno pepper) lifted me to Jove's Beard and Juno's Knockers! I recalled this passage from H. G. Wells!


Quite ordinary persons you perceive, both of them, outside their science. Or if anything on the unpractical side of ordinary. And that you will find is the case with “scientists” as a class all the world over. What there is great of them is an annoyance to their fellow scientists and a mystery to the general public, and what is not is evident.

No doubt long ago even Mr. Bensington, when he chose this calling, when he consecrated his life to the alkaloids and their kindred compounds, had some inkling of the vision,—more than an inkling. Without some such inspiration, for such glories and positions only as a “scientist” may expect, what young man would have given his life to such work, as young men do? No, they must have seen the glory, they must have had the vision, but so near that it has blinded them. The splendour has blinded them, mercifully, so that for the rest of their lives they can hold the lights of knowledge in comfort—that we may see!
